Steak & Chicken Fajitas....Paleo Style


Desperately trying to walk this Paleo walk...admittedly the stinky cheese made me weak in the knees at Bristol Farm's this morning...and yes I did more than taste the Morbier...it was brunch...again I digress...oh, yeah...Chicken and Steak Fajitas...sans tortillas. This was really, really good. I only had 2 hours to marinade the meat, so it wasn't nearly as good as it could have been.Ideally, at least 6 hours, overnight even better. The following marinade can be used for Chicken or Beef, I made both...marinaded separately.

My Crazy Marinade

  • juice from 4 limes
  • tons of crushed garlic
  • 3 tbls. soy sauce
  • cilantro
  • jalepeno diced
  • red wine vinegar 1/2 cup
  • 1 tbl cumin
  • 1 tbl oregano
  • salt & pepper


Marinade Beef or Chicken overnight...grill.


Serve with carmelized mushrooms, mixed peppers and onions. You can wrap in either tortilla's or Paleo and put your meat in romaine lettuce leaves.


Serve with guacomole and pico de gallo.
